Enjoy local food, farmer's markets, smart buying and preparation of food, composting, work farming, renewable energy stalls, talks on natural farming, landcare, building materials, renewable energy use, recycling through a mobile MFR (recycling plant), guided walks through the historic precinct of St Clement's Monastery, free children's activities and much more.
Stallholders - locally produced food and goods of an environmentally friendly nature are welcome. This is a zero waste event - compostable and recycleable products and containers are preferred. There is no site charge but current insurance coverage is a must.

Serge Dansereau
An energetic native-born Québécois but also an Australian citizen, Serge Dansereau grew up in Montréal and was accepted at the prestigious Institut de Tourisme et d’ hôtellerie du Québec in 1974, completing his diploma in Cuisine Professionnelle in 1976.
In 1983, Serge accepted a position to help open the newly built Regent, Sydney, voted in the top 10 hotels in the world. He was appointed Executive Chef of the Regent, and Kable’s quickly became a legend.
In 1989, the prestigious Sydney Morning Herald Good Food Guide proclaimed Dansereau Chef of the Year and in 1990, awarded 3 toques, its highest accolade, to Kable’s. In 1994, Dansereau was the recipient of the Sydney Morning Herald Special Award for Excellence, “for his work in helping redefine Australian cuisine, his passion for produce and his promotion of regionalism”.
His resignation from The Regent in 1999 was coupled with an announcement that he would join The Bathers’ Pavilion as partner and Chef.
Serge Dansereau is a chef and restaurateur who respects the service tradition and regards quality produce as the optimum ingredient in his cooking. In February 2003 Serge became the sole owner of The Bathers’ Pavilion.

Some Enchanted Eating
This is a rare opportunity to enjoy exquisite food, wine and music for the heart and soul in the beautiful and historic surroundings of one of Southern New South Wales' hidden gems.
Over the past 160 years Galong House, the heart of the St Clement's precinct, has been the scene of many a celebration but none can boast of a meal prepared by a chef such as Serge Dansereau.
This exciting event will be a first for the district using local produce to create a memorable three course dinner with a selection of quality regional wines.
The evening will commence with a performance of operatic arias and popular music in the atmospheric candlelit Boy's Chapel, followed by pre-dinner drinks and canapes on the verandah overlooking the expansive gardens.
The highlight of the evening will be a dinner in Galong House prepared by renowned Sydney chef Serge Dansereau, owner/chef of The Bathers' Pavilion at Balmoral Beach.
If you wish, you can complete the Galong experience by staying the night and enjoying a leisurely breakfast in beautiful surroundings. Several accommodation options are available.
